Abstract:食品には栄養的機能,嗜好的機能,生体調節機能の 3 つの機能が存在し,中でも生体調節機能は健康や疾病との関わりが深いことから,研究者だけでなく一般消費者にも広く注目されている.しかしながら,食品に含まれる成分がどのような生体分子と相互作用することで,機能を発現しているのかが不明な場合が多く存在する.筆者は,食品成分の標的分子として特に標的タンパク質の同定を介してその機能性発現メカニズムを解明することに取り組んでいる.本解説では,食品の中でも嗜好品に多く含まれているメチルキサンチン類を主題として,その標的タンパク質を介した肥満およびその関連症状の改善効果について紹介する.
